Warm weather brings an abundance of fruits and vegetables into season. This provides the perfect opportunity to enjoy unique, flavorful salads that will leave you feeling light and ready for summer fun!

Asparagus
Look for firm, plump spears that snap easily.
Beets
Look for bright greens attached to roots. Smaller beets are best.
Blueberries
Choose firm, dry, plump, and smooth-skinned berries.
Cantaloupes
Yellow or creamy in color and heavy for its size.
Corn
Evenly spaced, full rows of plump, rounded kernels.
Cucumbers
Bright, even color of skin without dullness or sweating.
Eggplant
Look for shiny, firm skin.
Okra
Firm, dry vegetables with no wet or dry areas.
Potatoes
Should be firm, smooth, have few eyes and no blemishes.
Summer Squash
Select the smallest and most fragrant, also firm and plump.
Tomatoes
Plump, firm, with a little “give.”
Watermelon
Choose one that is heavy for its size.
Zucchini
Small, firm squash about 6-8” with taut skin.
Remember, a salad doesn’t have to be all vegetables! Get creative - combine any of the above with brown rice, whole wheat pasta, orzo, or couscous. Then add meat, seafood, cheese, nuts, vinaigrette, or yogurt to round out the flavors.
Local farmers markets are a great place to get fresh produce. Though organic fruits and vegetables can be pricey, buying locally helps keep the cost down and the flavor up!
