Pumpkin Soup


Pumpkin Soup
Prep time: 10 min, Cook time 35 min

Ingredients:
2 and 2/3 cups chicken (or vegetable) stock
3/4 teaspoon salt
1 15oz can pure pumpkin
1/2 teaspoon chopped fresh parsley
1/3 cup chopped onion
1/4 teaspoon chopped fresh thyme
1/2 clove garlic, minced
1/4 cup reduced fat milk
Black pepper, cinnamon, or nutmeg to taste.

Directions:
Heat stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil, reduce heat to low, and simmer for 20 minutes uncovered.

Reduce heat to low, and simmer for another 15 minutes, uncovered. Stir in milk. Pour into soup bowls and garnish with fresh parsley.

Yields 4 servings
